My friend Fred, a born and bred old school Southern gentleman, send a tsk, tsk, all the way down from down there....you should have asked me he said....I know far better country ham producers than Benton's....some small local smoke houses without a license and let alone an interweb site....
Heh. I guess we couldn't please everyone. I thought it was mighty good. We had a good part of it for a big Easter dinner. I'll post more about it later.
Any fans of the film "To Kill a Mocking Bird" out there looking at this photo with great fondness? I wish kids these days would think of dressing up like a ham on Halloween!
from the poundage on that hunk of pig, i'd call it a 'deviled ham' for sure!!!

MMMMMM. What a prize. I first tasted Benton pork products at David Chang's Momofuku. The flavor and texture nearly knocked me off my stool.
