I've been reading (and using) The Zuni Cafe cookbook.
Thanks for the recommendation.
Like many teachers I have known
I find the author to be both
interesting and annoying. :-)
The salt curing of meats was of
particular interest to me.
I have discovered that people living on farms did this as a matter of course.
